A bar customer in Brazil, identified as Gilson, suffered minor facial burns after a fried snack exploded while he was eating it. The incident went viral on social media after being captured by security cameras.
The incident occurred on Friday the 13th. Gilson was eating the snack when its interior suddenly exploded in his face. The footage shows steam coming out of the snack.
The bar owner, Christian Souza, stated that he had “never seen anything like it in his life” and that he couldn’t sleep the night following the incident. He offered assistance to the customer by lending him a cold compress for his face.
Dr. Alberto de Andrade Reis Mota, a chemist and professor at Centro Universitário Uniceplac, explained that the snack’s explosion was caused by a rapid change in internal pressure.
Water does not evaporate at 100 °C if it is in an environment with pressure higher than atmospheric pressure, as was the case with the snack.
When Gilson bit into the snack, it released all the internal pressure quickly, causing the explosion.
It is recommended to fry snacks in fryers with a thermostat for four minutes at temperatures between 50 °C and 70 °C.
